The ultimate clean and grain-free tortilla pizza in just 10 minutes

You know I can’t resist taking a classic comfort food, and creating a clean, yet still flavorful, plant-based alternative.

On repeat this week is pizza. Well, grain-free tortilla pizza!

If you love the idea of pizza or crave it, but are trying to keep things clean and want to avoid the bloat and discomfort that comes with eating copious amount of bread and cheese, this a great, healthy, fun and satisfying option to play around with that will totally crush those cravings. 

And it could not be easier to make. All you need is:

  • a few grain-free tortillas (such as these)

  • a little bit of tomato or pizza sauce

  • some plant-based cheese that melts really well (I like this one)

  • your favorite vegetable toppings

  • an oven or toaster oven.

As you can see, this kind of meal doesn’t require much - just a handful of ingredients and about 10 minutes of your time!

Grain-free tortilla pizza

Prep Time: 5 minutes | Cook Time: 10 minutes

Ingredients:

  • 1-2 tsp avocado oil

  • 2 grain-free tortillas

  • 2-3 tbsp tomato sauce

  • 1/2 cup shredded plant-based cheese (1/4 cup for each tortilla)

  • 1 cup of assorted vegetables, thinly sliced (1/2 cup for each tortilla)

  • Additional optional toppings: fresh basil, oregano, salt and pepper

Directions

  • Preheat oven to 350 degrees.

  • Brush both sides of tortilla with avocado oil and bake for 5 minutes in the oven.

  • Carefully remove tortillas from the oven, allow to cool for 1-2 minutes. Keep oven on.

  • Spread a thin layer of tomato sauce onto the tortillas, sprinkle with cheese and top with vegetables.

  • Place the tortillas back in the oven and cook for an additional 5 minutes.

  • Remove from oven, allow to cool and eat with both hands instead of trying to slice it (it won’t break this way).
