Five hearty plant-based soups and stews keep you cozy (and healthy) this Fall.

Five hearty plant-based soups and stews keep you cozy (and healthy) this Fall.

Fall is my favorite time of year in the kitchen, nourishing myself, family and clients with warm, cozy, grounding dishes.

And some of my favorite things to cook up are soups and stews.

To kick off the season, I’m sharing five soups and stews I can’t wait to make and riff on in the coming weeks and months.

And they’re not your typical soups and stews either. On top of being delicious and hearty, they’re filled with good-for-you ingredients to improve digestive health, boost immunity and help you stave off common colds and the flu during fall and winter months.

Enjoy!

Cleansing Cabbage Soup

Made with ginger, garlic carrots, celery, cabbage, lime and a few delicious garnishes, this soup is as delicious as it is good for you. It’s designed to facilitate the body’s natural desire to cleanse this time of year. If you don’t care about that, it also happens to be very healing soup, so a great option if anyone in your house is feeling under the weather.  Check out the full recipe here.

Immune Boosting Ginger Potato Leek Soup

A spicy take on a classic winter soup. Made with yukon gold potatoes, leeks, garlic, fresh ginger and herbs - this soup is delicious, filling, clean as can be and seriously good for you. Filled with nutrient-rich vegetables and immune-boosting ginger and garlic. What I love most is that you can enjoy it warm or cold (if you’re a Vichyssoise fan like me). Check out the full recipe here.

Healing Autumn Roasted Apple and Butternut Squash Soup with Fennel, Ginger and Garlic.

Made with quintessential fall favorites like butternut squash and delicious honey crisp apples, along with healing foods like immune-boosting garlic, calming ginger and fennel for digestive support. There’s a lot going on with this soup but it comes together beautifully. It’s a mix of savory and sweet flavors and has been designed to improve and support health all season long. Check out the full recipe here.

Spiced Cauliflower and Potato Stew

Grounding and deeply flavorful (thanks to a slew of delicious digestive spices), this soup is perfect when you’re craving something cozy and nourishing on a cold day. My favorite way to eat it? With all the cilantro and a few slices of ripe avocado. Check out the fill recipe here.

Gentle and Cleansing Kitchari

A staple in my diet year round, but especially during the cooler months. Made with split yellow mung beans (also known as moong dal), white jasmine rice, coconut oil or ghee, a handful spices, and a couple of easy to digest seasonal vegetables, Kitchari is a simple and delicious Ayurvedic dish aimed at cleansing and restoring the body and digestive system. Check out the full recipe here.
