While I love a good slow morning in the kitchen making breakfast for me and my family, most days of the week require quick and easy meals so we can get started with the rest of the day.

And on those days, there’s nothing better than make ahead overnight oats.

This version is as easy as it gets, with just a handful of ingredients and only requires a couple of minutes of prep before you go to bed.

It’s perfect for hectic mornings, but also makes for a great a post-workout snack since it’s loaded with protein and other important macronutrients to help repair, refuel and re-energize the body.

Easy, make ahead overnight oats

Yields: 1 serving

Ingredients:

  • 1/2 cup quick oats (gluten free optional)

  • 1 tbsp chia seeds

  • 2 tbsp hemp seeds

  • 1 cup unsweetened plant-based milk

  • 1 tsp cinnamon

  • 1/2 tsp ground vanilla powder

  • 2 tbsp chopped walnuts

  • 1/4 cup mixed berries

Directions

  • Combine oats, chia and hemp seeds, cinnamon, vanilla powder and milk in an air tight container, such as a mason jar, shake gently to mix ingredients and let sit, sealed, in the fridge overnight to thicken.

  • After letting sit in the refrigerator over night, remove the lid from the jar and top with walnuts and berries. Mix well with a spoon so ingredients are even throughout and everything can be enjoyed in one bite!
