Easy, high-protein tofu and spinach scramble

This tofu and vegetable scramble is the perfect way to start your day.

It’s light, easy to digest, loaded with protein to keep you full all morning, and includes a couple of heaping handfuls of spinach, which is packed with vitamins and other nutrients.

You can make it in just five minutes, and can use the recipe below as is or as a guide if you wish to include additional vegetables or spices.

Easy, high-protein tofu and spinach scramble

Prep Time: 5 minutes | Cook Time: 5minutes | Yields: 1 serving

Ingredients:

  • 1/3 pckg of firm tofu, crumbled

  • 2 tsp turmeric powder

  • 2 heaping handful of baby spinach

  • 2 tbsp cooked quinoa

  • 1 tbsp plant-based cream cheese (I like Blode Kuh or Monty’s NYC as they’re both minimally processed)

  • Salt, to taste

Directions

  • Coat a non-stick medium size sauté plan with a bit of spray oil, place it on a low-medium heat, and add tofu and turmeric. Toss until tofu is coated in turmeric

  • Add spinach, mix well until spinach has wilted (about 2-3 minutes). Mix in cooked quinoa.

  • Transfer scramble to to plate, top with cashew cream cheese and salt.

  • Serve warm (immediately).

Notes: If you prefer melted cheese, add cheese to the pan with the tofu, spinach and quinoa at the very end and mix well until it is melted.
