Clean, light, healthy and delicious plant-based ceviche

Clean, veg-filled, healthy, and delicious - this hearts of palm ceviche is a must try the next time you’re craving a light salad or snack, or serving up guests at a dinner party. 

If you follow my recipes, then you know I can’t resist taking a classic non-vegan dish and putting my plant-based spin on it. Meaning, it’s gotta be super clean, light, healthy and easy to digest.  

Made with an array of crisp, colorful vegetables, fresh herbs and a bit of lime juice, this ceviche swaps fish for delicious hearts of a palm…And it is as good for you and fun to make as it is delicious to eat.

Here’s what I love about it - 

  • It’s colorful, which means it contains a wide variety of vegetables - each containing unique vitamins, minerals and antioxidants that work together to help you maintain good health, and help protect against both minor and serious illness and diseases. 

  • Since it’s made with just vegetables, it’s low-calorie, making it ideal for anyone looking to maintain or lose weight.

  • You can throw it together in 5 minutes. Who doesn’t love a healthy dish that comes together in just minutes?!

  • It includes cilantro, which, despite being a polarizing herb in terms of taste, happens to be insanely good for you. It’s been used medicinally since ancient times, and is believed to improved brain health, lower blood sugar, is rich in immune-boosting antioxidants and can improve digestion and promote better gut health. 

  • It can be made year-round, using a variety of seasonal vegetables, and is easy to riff on - using what you’ve got on hand or other vegetables you might prefer.

  • It’s incredibly easy to make, requiring ZERO culinary skills at all.

  • There’s lot of room to play around with flavors and spices. The version below is mild, but would be great with a dollop of hot sauce or a pinch of dried chili powder or flakes if you’re feeling spicy!

There’s nothing not to love about this dish. It’s fun, colorful, healthy, light, easy and delicious.

Enjoy it on it’s own, like a salad, or plop it on a table with a handful of grain-free tortilla chips and let the whole family graze on it one lazy afternoon.

Plant-Based Hearts Of Palm Ceviche

Prep Time: 5 minutes | Yields: 2 servings

Ingredients:

  • 1 persian cucumber, thinly sliced

  • 1 jalapeno pepper, de-seeded and finely chopped

  • Small handful of grape tomatoes, halved

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup of fresh or frozen and thawed corn

  • 1/2 can of hearts of palm, drained, rinsed and chopped

  • Small handful of fresh cilantro, roughly chopped

  • 1/2 an avocado, sliced

  • 1 lime, juiced

  • pinch of salt and pepper

  • 1 tsp avocado oil (optional)

  • Handful of grain-free tortilla chips

Directions

  • Combine cucumber, jalapeno, tomatoes, onions, hearts of palm, corn and cilantro in a small bowl with lime juice and toss gently until evenly mixed.

  • Top with avocado, salt and pepper, and avocado oil.

  • Serve cold with grain-free tortilla chips.
